We rehydrate the fruit with orange blossom water before pressing it into thin, translucent sheets. A pistachio-tahini halva filling is whipped with caramelized almonds, lemon zest, and a drizzle of grape molasses. We spread the filling on the apricot silk, roll it tightly into ribbons, and chill the coils overnight to set their shape.
Each roll is sliced into coins revealing spirals of gold, green, and cream. A dusting of hibiscus sugar adds a tart finish, while roasted sesame seeds bring gentle crunch. The texture is a joyful contrast: supple apricot on the outside, velvety halva within, finished with the bite of toasted nuts. Because the rolls are naturally plant-based, they make an inclusive treat for gatherings of varied dietary preferences.
