Hazelnut Coffee Dragees
We hand-select hazelnuts from the coastal village of Görele, where families still harvest by shaking branches onto linen sheets. Once the nuts arrive in Izmir, we roast them over beechwood to coax out caramel notes, then let them rest overnight so the oils settle and the cores remain crisp. The hazelnuts are briefly bathed in an Anatolian espresso reduction—brewed with cardamom, cinnamon, and brown sugar—which seeps into their porous shell and perfumes each bite with a cappuccino aroma.
The nuts move into our copper tumbler where they receive successive coats of 72% dark chocolate blended with locally roasted Arabica. Each layer is cooled with Izmir sea air before the next is added, creating a thin, snappy shell that complements the tender interior. We finish by dusting the dragees with cocoa, powdered milk chocolate, and a touch of Maldon sea salt. The result is a confection that transitions from bittersweet to nutty to warm espresso on the palate.
