We warm it slowly with beet sugar in a copper cauldron before streaming in whipped free-range egg whites, creating satin ribbons that triple in size. The mixture is perfumed with orange blossom water, lemon zest, and a hint of sea salt. Once the base reaches the perfect glossy sheen, we fold in roasted Siirt pistachios, green cardamom, and shards of candied orange peel. The result is a soft yet structured nougat studded with emerald crunch in every bite.
Each slab is hand-pressed between sheets of edible rice paper, rested overnight, and then cut into bites using olive-wood blades that prevent sticking. We finish the pieces with a dusting of ground pistachio and dehydrated rose for a whisper of aroma. The nougat delivers layers of flavor—first citrus, then honey, and finally the buttery depth of freshly roasted nuts.
