At the precise moment before caramelization, baking soda is sifted in, causing the syrup to erupt into pillowy honeycomb. We pour the foaming mixture onto marble, drizzle in distilled rose water, and shower it with crushed pistachios and toasted sesame praline. The honeycomb cools into golden lace that snaps with a gentle crack.

Every sheet is hand-cut into irregular shards, then lightly glazed with beet sugar syrup tinted by hibiscus for a jewel-like sheen. The brittle delivers evolving flavors: first a floral breeze, then deep caramel, and finally a nutty sesame finish. Because the interior is filled with microscopic bubbles, it melts on the tongue but retains enough crunch to satisfy brittle enthusiasts.
